Instructions

  1. Beat the eggs in a bowl until fully mixed.
  2. Preheat a non-stick skillet over medium heat.
  3. Add the chopped bell peppers and asparagus to the skillet and sauté for 3-4 minutes.
  4. Add the cherry tomatoes and stir until slightly softened.
  5. Pour the beaten eggs over the veggies, reduce heat, and cook until set.
